Fava Beans

You can’t go to Egypt without trying this beloved broad bean dish, which is cooked with cumin, olive oil, lemon juice, garlic and onions.
Served with bread, tahini and salads, this staple is a breakfast staple or a pita sandwich from street vendors as a quick meal.
Mahshi

Mahshi is literally all things stuffed. Vegetables like zucchini, peppers, eggplant, cabbage leaves and grape leaves can all be stuffed with different combinations of spiced rice, ground beef and pine nuts.
Tough to make, but very satisfying to eat, grape leaves are a common type of stuffing made from grape leaves, known in Greece as dolmades.
The rice mixture and sometimes the meat are skillfully wrapped in leaves and cooked until tender. These delicious fingers are easy to pick up with your own hands and are found on most dinner tables in Egypt.
